I hope everyone’s Easter weekend was a good one! We celebrated by cooking a big brunch, FaceTiming with family, and ordering in pizza and wings for dinns teehee. We definitely took advantage of the food ordering sites this weekend, except for Friday, but this week, it’s back to cooking at home for us (healthier and cheaper!)
Speaking of which, I shared a story Friday night after making dinner and sooooo many people DM’d requesting the recipe. I didn’t end up typing it out at the time, and since so many requested it, I figured I would just share it here! That way it would always be saved in case anyone ever wanted to go back and find it.
The recipe is for my Mawmaw’s chicken in a biscuit (I’ve since learned this is a very southern dish lol). I grew up on these things and would literally have times when I CRAVED them. They’re THAT good. I made them for Jordan for the first time last year one night when we needed a new recipe and he loved them! We have actually since started doubling the recipe, so that we have plenty for dinner for the both of us, AND so that we have enough for leftovers! (These store and heat back up really well!)
So without further adieu, here’s the recipe for my Mawmaw’s famous (can we call them famous? I think they should be deemed famous) chicken in a biscuit recipe.
So that’s it friends! That recipe will make you 8 chicken in a biscuits. Like I said, we double the recipe now to make 16 and as it turns out, after talking to my Mawmaw, I found out that she actually does that too! Also, if you’re like me and you don’t want to have to actually cook the chicken before you put it in the mixture, use this cooked canned chicken. It literally tastes just the same and saves SOOO much time. I drain it before I add it in the mixture.
